White Christmas


Ingredients:

3 Cups Rice Bubbles (Rice Krispies)
250g Copha (or Solid Coconut Oil)
1 Cup designated coconut
1 cup mixed fruit 
(sweet glaced cherries, saltanas / raisins)
1 Cup Powdered Milk
3/4 Cup Icing (Confectioner's) Sugar
1 Cup White Chocolate

Directions:

 Mix dry ingredients together in large mixing bowl 
(Glass or metal, not plastic)

Melt copha & chocolate over LOW heat
 in a saucepan until melted

Add Copha/chocolate to dry ingredients

Press down into Greased Pyrex Dish

Freeze until set

Cut into squares

Keep in fridge till serving

Chocolate Fudge

Ingredients:


3 cups semi-sweet chocolate chips
1 can sweetened condensed milk
1/4 cup butter or margarine
1 cup walnuts or saltanas


 Directions:


Place Chocolate chips, condensed milk & 
butter in microwave bowl

Microwave on 50% heat until 
chocolate is melted 3-5 mins
Stirring once or twice during cooking

Stir in nuts or saltanas

Grease baking dish with butter sides & bottom

Pour fudge into well-greased baking dish 20x20cm

Chill in fridge till set

Crepes

Ingredients:


1 cup milk
3/4 cups all purpose flour
2 eggs
1/8 tsp salt
lemon juice
sugar

Directions:


Mix milk, flour, eggs & salt together in a blender

Let sit 20 minutes
 Heat a non stick skillet to Med

Melt a tiny bit of butter
Spoon mixture into desired size crepe

Turn when one side is brown

Brown second side and serve hot

with lemon juice drizzled on top and 
lightly sprinkle sugar over the top

Chocolate & Pear Wonton Cups

Ingredients:


Wonton Wrappers
3 Pears
1 cup Semi-sweet chocolate
3/4 Cup Heavy Cream
1/4 cup Sugar
1 egg
1 egg yolk
1 tsp Vanilla Extract
Marscarpone Cream Cheese

Directions:

Pre-heat oven 375F

Peel., core & cut pear into 1cm
cubes

Cook Pear in microwave on high 2-3mins until tender
Remove from microwave and let cool

In a double boiler, melt chocolate with cream
Whisk thoroughly, add sugar, mix through until dissolved
Set chocolate sauce aside and let cool

Whisk egg and egg yolk in a separate bowl
with a hand-beater, add vanilla extract

Add cooled chocolate mixture and blend on med-low
until well combined
Add chopped pears and gently fold in with a spoon

Lightly spray mini-muffin pan with Butter Cooking Spray

Place one wonton wrapper in each muffin space
Fill to 3/4 full with chocolate and pear mixture

Lightly spray tops of wonton wrappers with cooking spray

Bake on middle oven rack for 12-15 mins 
until wonton wrappers start to brown
Remove from oven and let completely cook

Scoop  1/2 melon ball scoop of 
marscarpone on top of each wonton

Garnish with mint leaf

Home-Made Ice Cream

Ingredients:

2 Cups Heavy Cream
1 Can Condensed Milk
3 Egg Yolks
4 Tsp Vanilla Essence

Directions:

Mix cream, condensed milk
& vanilla essence together on stove
Med-High till heated through

DO NOT LET MIXTURE BOIL

Remove from heat

Lightly beat egg yolks in a separate bowl

Slowly add cream mixture to egg yolks
a little at a time and whisk until combined

Pour into 9"x5" Pyrex Dish and freeze overnight 6-12hrs
in freezer

Serve with Hot Fudge Chocolate Topping

Cover remaining Ice cream & keep in freezer

Apple Crumble

Ingredients:

5 Large Granny Smith Apples
1/2 cup Sugar
1/4 cup Water
2 Tbsp All Purpose Flour
1 Tsp Cinnamon

Topping:

1 Cup Brown Sugar
1 Stick Butter
1 Cup All Purpose Flour

Directions:

Pre-heat oven 350F

Peel and Core Apples, Cut into Cubes
Add apples, sugar, flour water and cinnamon to saucepan
Cook until apples are soft
Bring to Boil

Remove from heat

Spoon into ramekins or serving dish

In a mixing bowl add topping ingredients
Mix with your hands rubbing all ingredients
together until crumbly
Sprinkle over the top of apples

Bake 350F for 30 minutes

Broil under 400F broiler on top rack to brown top for 3 mins

Serve hot with Home-made Ice Cream

Lemon Sorbet

 Ingredients:

2 Large Lemons
1/2 Cup Sugar
1/2 Cup Carbonated Mineral Water
1 Cup Water

Directions:


Peel rind from one lemon and chop into tiny pieces
Place chopped rind in small saucepan
add 1 cup water and sugar
Stir and bring to boil

Reduce heat to low, simmer 5 mins

Remove from heat and cool

In a separate bowl, mix saucepan syrup
lemon juice and mineral water
Whisk 3 mins and place bowl in freezer

Every hour for the next 4 hours whisk lemon
mixture for about 3 mins and return to freezer

The more you whisk the lighter it will be

Freeze overnight

 When you are ready to serve:

Spoon shaved sorbet into serving cups
add lemon peel and skewer strawberry  
with a toothpick to center of cup

Open Focaccia Sandwiches


Ingredients:

1 Focaccia Bread 
Goat Cheese (or cream Cheese)
Cooked Chicken Breast
Sun-Dried Tomatoes
Cooked Bacon
Anchovy Paste
Kalamata Olives
Green Onions
Chives



Olive Oil

Directions:

Make Lemon & Sun-Dried Tomato Sauce
from recipe above (click on link)

Pre-Heat Broiler to 420 F

Cut Focaccia bread through the middle
Arrange on a Pizza Tray or cookie sheet

Lightly Drizzle Olive Oil over Focaccia
Slices

Broil 4 mins till crispy

Spread Goat Cheese on bread
Add Cooked Chicken Breast
Spoon Lemon & Sun-Dried Sauce on top
Cooked Bacon
Add Sun-Dried Tomatoes
Add Kalamata Olives
Anchovy Paste
Chopped Green Onions
Chopped Chives

Place back under the broiler until
chicken is warm 4-5 mins

Serve Hot

Optional:

Add Anchovy Paste
& Kalamata Olives

Add a drizzle of lemon juice on top 
before broiling in last step

Ingredients:


1/4 Cup Sun-dried Tomatoes
Fresh Basil
2 Tbsp Minced Garlic
1 Stick butter
1/4 Cup white cooking wine
1/3 Cup Lemon Juice
2 Tbsp All Purpose Flour



Directions:

 Place Butter, garlic, cooking wine &
Lemon Juice in a Medium Saucepan on
Med-High until butter is melted

Add Sun Dried Tomatoes, Basil and stir

Whisk 1 Tbsp All purpose flour at a time
until smooth and lump free



 Serving Suggestions:


Serve over chicken with goat cheese,
over cooked pasta
or use as a pizza sauce or
base sauce for foccacia sandwiches

Apple, Cheese & Proscuitto Sail Boats


Ingredients:

Granny Smith Apple
Soft Cheese Wedges
Prosciutto
Mint leaf to garnish
Toothpicks

Directions:

Cut Apples into Wedges
Wrap Cheese Wedges in Prosciutto

Stick a toothpick from top of apple 
to bottom of cheese wedge

Garnish with mint leaf

Delicious Burgers at Home


For $15 or less
you can make 6 tasty burgers at home

Ingredients:

6 Hamburger Buns
6 Romaine Lettuce Leaves
1 Beefsteak Tomato
6 Hubba Burger Patties
6 Slices Swiss Cheese
Mayo
Yellow Mustard
Tomato Sauce

Directions:

 Preheat broiler to 400F

 Cook bacon rashers in non stick skillet med-high
drain bacon fat and set aside

Cook Bubba burgers from frozen
in the same non-stick skillet 
until red juices appear at top of the burger
flip burgers over and add cheese slice to top of patty
cook for 3 mins (med-rare) / 5 mins (med) 
depending on how well you like your beef cooked
I like mine med-rare

Drain and set aside on a plate

While bubba burgers are cooking
toast buns on pizza tray under broiler
2-3 mins with door open

Assemble burgers

Spread Mayo on bottom of bun
add lettuce
Tomato slice
bubba burger
cheese slice
cooked bacon rasher

Spread top of bun with
mayo, mustard, tomato sauce

 It's as simple as layering:

Original Baked Beans
Mild Taco Sauce
Grated Sharp Cheddar Cheese
Tortilla Chips

Serve with a plastic serving spoon down side of cups

Beef Bites


 Ingredients:


 Pita Bread or Flat Bread
1 Lb Ground Sirloin
Pizza Sauce
8 oz Grated Mozzarella Cheese
1 Lb Bacon Rashers
1 tbsp Parsley Flakes
1 tsp Minced Garlic
1 tbsp Soy Sauce
Chives to Garnish

Directions:


Preheat Oven to 420 F

In a non stick skillet cook 
bacon rashers on med-high till crispy, set aside

Drain Most of Bacon fat, leaving 1-2 tbsp
Cook Ground Sirloin in bacon fat, season with
parsley, soy sauce, garlic

Drain well with slotted spoon and set aside

Assemble your Pizza Bites

Pizza Sauce
Lightly cover with cheese
Cooked ground sirloin
Cooked bacon rashers 
cut over pizza with kitchen scissors
Light layer of Cheese
Lightly sprinkle paprika
Lightly sprinkle Parsley Flakes

Bake 10-12 mins on middle oven rack till crispy
and cheese has melted

Garnish with chives

Optional:


Add Pineapple
Black Olives

Ingredients:


Granny Smith Apples
Marscarpone Cream Cheese
Small Wonton Wrappers

Mint Flakes to garnish


Directions: 


Preheat Broiler to 410F

Core & Cut Apple into Slices
Wrap in Wonton Wrapper

Place on Flat Cookie tray or Pizza Pan

Broil until brown

Serve with Marscarpone Cream Cheese
& Spreading Knife

Garnish Marscarpone with mint leaf

Mushroom Gravy Topper



Ingredients:


8 oz Portabello Mushrooms
4 tbsp butter
1-2  tbsp All purpose flour
Freshly ground Salt & Pepper
1/2 tsp oregano
1 Cup Dry Marsala Wine

Directions:


Melt butter in non stick pan med-high

Add mushrooms, salt, pepper, oregano
to pan & Cook mushrooms until brown

Add Marsala wine and cover with lid or foil

Turn heat to low and simmer 5 minutes

Add all purpose flour 1 tbsp then stir into sauce
making sure there are no lumps of flour

Depending on the thickness of the sauce / gravy
add more flour if needed a little at a time
until you reach the desired thickness you like


 Serving Ideas:


Spoon Over Cooked Chicken or Steak

You could also use this sauce with cooked pasta


A sprinkle of lemon juice on top will 
bring this sauce to another dimension

RECIPE: Chicken Marsala


Ingredients:

  • 2 Boneless, skinless Chicken Breast Fillets
  • 16 oz Sliced Portabello Mushrooms
  • 1 Tbsp All Purpose Flour or 1 tsp cornflour
  • Ground Sea Salt
  • Ground Black Pepper
  • Dried Parsley
  • 2 tbsp Extra Virgin Olive Oil 
  • 2 tbsp Butter
  • 1/4 cup Dry Marsala Wine
  • 1 Lemon

 

 

Directions:

Pound chicken with a meat cleaver between plastic wrap, cut into strips or butterfly if leaving breasts whole

Heat Butter in non stick skillet on med-high

Add parsley, marsala wine and Saute Mushrooms until soft, remove mushrooms with slotted spoon, set aside

Add oil to pan, Brown Chicken both sides

Cover with lid and steam until chicken is cooked through 3-5 mins

Return mushrooms to pan

Add lemon juice squeezed into sieve over skillet

Carefully remove 2-3 tbsp sauce from pan to a small bowl, whisk in flour with fork until lump free

Return slurry to pan, this will thicken sauce

Season with ground Sea Salt & Pepper to taste

Make sure all ingredients are mixed through sauce


Serve hot

Serving Suggestions:


Serve with Mashed Potatoes & Green Beans

Serve over boiled Jasmine Rice

Serve over Fettuccine Pasta

Serve over Shirataki Noodles for Low Carb

Summer Dessert


Ingredients:


1 Tub Cool Whip
4 Orange Jello Cups
4 Red Jello Cups
1 Can Mandarin Oranges
1 Block Cream Cheese
1 Cup Fresh Strawberries



Directions:


Cut Stems off strawberries and cut into 1/4's

Cut jello cups into cubes of jello

Drain Mandarin Oranges

Beat Cream Cheese till smooth with hand beater
Gently Fold in all ingredients with a metal spoon

Spoon into your serving dish of choice
(you can make individual desserts or one large parfait bowl)
 and chill 3 hours minimun in fridge

KDArtStudio Own Asian Beef Skewers

Ingredients:

1 Lb Milanese Beef (Very thin sliced)
(or You could use flank steak & Pound It Thin)

2 Tsp Oyster Sauce
4 Tsp Low-Sodium Soy
4 Tsp Dry Cooking Sherry
1 Tsp Bicarb Soda
1 Tsp Cornflour

Directions:

Cut steak into strips

In a large stainless steel or glass mixing bowl
add Oyster Sauce, Soy, Sherry, Bicarb and Cornflour 
and mix until smooth and lump free with a fork

Place beef in marinade and toss till all meat is coated
Marinate meat in sauce, covered in fridge for 3 hours
(or overnight if you have the time)

When Meat has been marinated and is ready to cook

Soak skewers in water so they won't burn when cooking

Preheat Broiler 400F

Thread Beef Strips on Skewers
and lay on flat oven proof dish or tray

Cook 3-4 mins on top oven rack
then turn with skewers
Cook another 3-4 Mins

Kalamatta, Proscuitto Lemon Spaghetti


Ingredients:


1 Lb Angel Hair Pasta
1/3 Cup Lemon Juice
1 Cup Parmesan / Romano Grated Cheese
1/4 Cup Olive Oil
Pitted Kalamatta Olives
Proscuitto

Directions:


Cook Pasta in boiling water 4 mins till al-dente

In a mixing bowl add cheese,lemon juice & olive oil
whisk with fork till combined

Toss Pasta in sauce

Add proscuitto & Olives
Garnish with freshly grated Parmesan

Thin & Crispy 
Pita Bread Pizza Bites

Turn Broiler on to 420F

Broil Pita Bread or Flatbread with bottom side UP
directly on top wire rack under hot broiler for 1-2 mins
door open

Remove from broiler

Turn over onto wire cake rack

Lightly Spread your base with sauce of choice:


*Pizza Sauce
*BBQ Sauce
    *Alfredo Sauce
* Pesto Oil 
* Olive Oil & Garlic

Add Cheese:

Spread a thin layer of 

*Grated mozzarella 
*Italian Blend Grated Cheese
*Goat Cheese


Layer your Protein:

*Rotisserie Chicken
*Cooked Beef
*Italian Sausage
*Ham
*Pepperoni
*Cooked Bacon Rashers

Add Toppings:

Top with thin layer of Cheese

Drizzle Olive Oil on top

Chicken Alfredo


Ingredients:


1 Lb Fettuccini
1 Lb Skinless, boneless Chicken Breast

Alfredo Sauce:

1/4 Cup Milk
8 oz Cream Cheese
1 Stick Salted Butter
1/2 Cup Parmesan Cheese
3 egg yolks
1/3 Cup Lemon Juice
Freshly Ground Salt & Pepper to taste

Directions:

Cook Pasta in boiling water till al-dente

Cut Chicken into strips
Cook in non-stick skillet med high
with lid on until cooked 12-15 mins

In a medium saucepan
Combine milk, butter, cream cheese,
cheese, lemon juice
Whisk on stove top on med high
till mixed through

Remove from heat

Add egg yolks one at a time
and whisk into sauce off the heat

Return to heat sauce to reheat for about  30 seconds

You do not want the eggs to overcook

Toss chicken and pasta in sauce

Garnish with Parsley Flakes
